The lemon, the fruit of the lemon tree


For all, or almost all, it is known that lemon is the fruit of the lemon tree, which is the tree. But very few of us have not stopped to think about the characteristics of lemon, either through neglect or for lack of importance to us. Today we will take an interest in lemon and physical characteristics that it possesses.

Usually, the lemon is oval and usually ends in a rather characteristic nipple. Usually the fruits of one lemon differ in shape and appearance, both along the same cycle of production and season to season.


The flavedo (epicarp and external mesocarp) is the outer layer of the lemon, which we call rind. Its color varies from green to bright yellow depending on the maturity. Contains essential oils of numerous glands that characterize its aroma. These are rich in terpenes, glands constitute a real barrier against the attacks of insects and microorganisms.

The albedo (inner mesocarp) is the white, spongy inner layer of the fruit, and the most important source of pectins and carbohydrates. Its thickness varies according to variety, mainly, and fruit maturity.

The flesh is pale yellow. Typically a lime containing 8 to 12 parts hiding elongated cells (endocarpianos hairs formed by a large vacuole in which accumulate water and citric acid gúcidos) wrapped in an inner epidermis (endocarpino). It is what we call juice pouches. Each slice contains hundreds of bags and occasionally we can find some seed or bone.

The central part of the lemon, a scourge bank is known as columella. Depending on the variety, mainly, it may be more or less thick.
